The fruit for this wine was sourced from our vineyards in South Eastern Australia. The climate is hot with high evaporation rates and generally low rainfall, making irrigation essential. The climate is also continental, resulting in long sunny days and noticeably cooler nights. Long sunshine hours ensure fruit ripens fully and low relative humidity results in little incidence of disease.
Chardonnay is the world's favourite grape variety with its long popularity stemming from its versatility. As a variety, it takes well to oak or can produce unwooded fruit forward styles which, depending on the wine can be drunk while young or develop further with age. Its versatility also extends to food matching which makes it a great accompaniment to a wide variety of meals and indeed cuisines. Harvested at night, this chardonnay was crushed and pressed and the resultant juice was clarified. Fermentation was conducted on French and American oak planks at cool temperatures to retain maximum fruit characters. This light use of oak has added creaminess and vanillin, giving the wine more depth, weight and complexity.
